Growing of yam
Originally native to the mountains, yam prefers hard, well-drained land. We make every effort to create an environment that is as close to the wild as possible. For example, we try using mountain soil collected from our own mountains as it is, or river sand that drains well, to see what will please the yam best. We apply fertilizer only once when planting, and then grow the potatoes without fertilizer or pesticides. Because yam plants are very wild, they tend to grow soft if too much fertilizer is applied. Perhaps it is because of the harsh environment that they store so much energy in themselves.
Nutritional Value of Yam
Japanese yam has been used in medicine since ancient times, known as San-Yaku. Even today, it is used as a herbal medicine in Chinese herbal prescriptions. The secret of its use has been revealed in recent years, and it is now known that it contains many ingredients such as amino acids, minerals, folic acid, and vitamin B complex, which are strong allies in relieving fatigue and strengthening the immune system. It is also characterized by its high vitamin E content, which is by far the highest among potatoes. Vitamin E is a vitamin for rejuvenation and is doubly important for anti-aging. In addition, the sticky ingredient mucilage protects the mucous membrane of the stomach, aids in the elimination of excess cholesterol, and contains the digestive enzyme amylase, making it a hermit-like herb with profound power.
Tororo
You can easily and quickly grind tororo (grated yam) by grating it in a circular motion on a grater. You can grind it as it is, but if you use a mortar and pestle to grind it further, you can get a smoother yam. If you remove the whiskers and grate it with the skin on, it will have a wild flavor. If you peel the skin off and grate it, it will be pure white and sticky like a rice cake. Also, if you chop it coarsely with a knife and stir it with an electric hand blender, you can make airy, fluffy yam easily, which is also recommended.
KYO-SENNIN 500g
Cut yam can be stored in the packet in the household refrigerator for up to 3 weeks. The cut edges may become discolored with scum, but it is okay if you remove that part when you eat it.
Whole yam can be stored in the clear bag in which it was sent, out of dryness, in a cool, dark place without heating during the winter for at least one month.
